Apples: You just can’t get enough of them, but you’ll have to enjoy them while they last because supplies are limited this year. Here are several awesome, easy ways to enjoy Ontario’s favourite fruit!
Make apple chips!
Slice your apples thinly, all about the same size so they dry evenly. Rings are a nice shape. Dip them in lemon juice (or apple cider vinegar) and spread them on a baking sheet that is nonsticky, or if you have an old tray lay parchment paper over it. Slide them in an oven preheated to 250oF and bake for about an hour or until they are fairly dry and slightly browned. As they cool they should crisp up and can be eaten as is or broken into pieces and added to trail mix, granola, baked goods, or lots of other things too!
Eat an apple and cheddar sandwich with home-made vegan mayo
Ok, this one is pretty self-explanatory but it is the mayo recipe that I really wanted to sneak in. Eggy homemade mayo is delicious, but for the vegans out there we are treating you to a home-made mayo recipe that you recognize from your Spoon wraps. You need a blender for this one.
1 cup oil (sun ower works nicely)
½ cup soy milk
¾ tsp. salt
1-2 cloves garlic
½ tsp good quality mustard
1 ½ tsp. lemon juice or apple cider vinegar.
Combine oil, soy milk, salt, garlic, and mustard. Blend until smooth, then with the motor still running, slowly add your lemon juice and apple cider vinegar. is will cause your mixture to thicken up deliciously. You can try adding extras like chipotle, cayenne spice, basil, or cilantro for a di erent avour. Apple and cheddar is an awesome combo especially with home-made mayo on a delicious slice of fresh bread.
Marissa’s Stuffed Apple Bake
For one sad year, my old roommate and dear friend Marissa suffered from a ton of food allergies and pretty much lived on apple slices and peanut butter (by the way, the best snack ever). When she was craving dessert or feeling fancy, we would make up these delicious snacks. Savoury and sweet, they always hit the spot.
Preheat your oven to 350oF. Carefully core a good crisp apple—Macintosh works well. You don’t want to go right through the apple; you need to make a hole to put your filling in.
What’s your filling? Whatever you like, but make sure to toss it all in a good drizzle of maple syrup and a sprinkling of salt and cinnamon. (and nutmeg? Or cloves?) We would always use cranberries or raisins, some kind of chopped nut (pecans are the best) and seeds too. Know what else is great? Left over oatmeal, some granola, or even rice. So mix it all with your sweetener and spices, stuff that stuff in your apple and, for a real decadent treat, top with goat cheese.
Bake for about 10-15 minutes or until you can’t stand it anymore—you want your apple to be soft but still have a bit of crunch. Enjoy!
